In honor of the Chinese New Year (year of the Dragon) I made favorite, chicken & broccoli with brown rice. True enough, it’s not the traditional Chinese dish but it was as yum!
I pan-fried my chicken breast adding a lot of spice (garlic, sazon, pepper, a tad of cayenne) then covered it with onions and simmered on low.
I used boring brown rice (just trying not to cook the much beloved White rice as often). I try to ‘kick it up’ by adding onion powder along with garlic & salt. Frozen broccoli serves me well.
